Potato Soufflé (Cookeo)

Instructions

  • 1.   Steam the potatoes
  • 2.   Whisk the egg yolks with the cream, salt, pepper, and a little nutmeg
  • 3.   Add the mashed potatoes
  • 4.   Add the cheese
  • 5.   Beat the egg whites with the sugar until stiff peaks form, then fold into the mixture
  • 6.   Pour into a mold and cover with plastic wrap
  • 7.   Place in the cooker with 25cl of water and the steamer basket
  • 8.   Cook on SP (steam) for 1 hour
  • 9.   Let cool for 5 minutes, then unmold.

  • 20 cl of liquid fresh cream
  • 60 g of grated Gruyère cheese
  • 5 eggs
  • 1.5 teaspoon of sugar
  • 1 nutmeg
