Spiced Mango with Citrus Juice

Instructions

  • 1.   1) Squeeze the orange, grapefruit, and lemon. Pour the juice into a small saucepan. Dissolve the honey in the juice.
  • 2.   2) Add the mint and spices. Gently bring to a boil. Let it boil for a few minutes, then turn off the heat and let the spices infuse in the citrus juice for at least 15 minutes.
  • 3.   3) Cut the mango into cubes in a bowl. Strain the citrus juice through a sieve (if you don't have a sieve, you can put the spices in a cheesecloth before adding them to the citrus juice) and pour it over the mango cubes. Let it marinate in the refrigerator for a few hours before serving.
  • 4.   4) You can serve it as is, or sprinkle it with toasted sliced almonds in a pan and/or serve it with a scoop of vanilla ice cream.

  • ½ vanilla beans
  • 1 tablespoon of fresh mint
