Leeks with vinaigrette

Instructions

  • 1.   Boil the egg for 10 minutes in water with a little vinegar.
  • 2.   Cook the leeks in a pressure cooker in the steamer basket for 15 minutes.
  • 3.   In a salad bowl, combine the oil and vinegar.
  • 4.   Add the mashed egg yolk and shallot, and mix well to obtain a homogeneous mixture.
  • 5.   Add the chopped egg white.
  • 6.   Place a warm leek white on each plate and drizzle with vinaigrette.
