Instructions

  • 1.   Wash your cauliflower and cut it into pieces.
  • 2.   Peel the sweet potato and cut the flesh into small cubes.
  • 3.   In a saucepan, heat the soy milk and broth.
  • 4.   Place your cauliflower and sweet potato pieces in the saucepan and cook them over low heat for about 25 minutes.
  • 5.   Blend in a blender. Season with salt and pepper to taste.
  • 6.   Separate the parsley leaves.
  • 7.   Divide your cream into 4 bowls. Garnish with pesto and a coriander leaf.
