Butternut Squash Puree with Thermomix

Butternut squash, also known as doubeurre, is a squash that is easily recognizable with its elongated shape, like a long pear. Often used in soups, it is also excellent as a puree served as a side dish with meat or fish. Personally, of all the squash purees, Butternut squash puree is my favorite. So here is the recipe with Thermomix :)

Instructions

  • 1.   Place the halved onion in the Thermomix bowl.
  • 2.   Add the lid with the measuring cup.
  • 3.   Mix 5 sec/speed 5.
  • 4.   Add the peeled and diced butternut squash to the Thermomix bowl.
  • 5.   Scrape the sides of the bowl with a spatula.
  • 6.   Add the peeled and diced potatoes to the Thermomix bowl.
  • 7.   Add 1 teaspoon of salt to the Thermomix bowl.
  • 8.   Add a pinch of pepper to the Thermomix bowl.
  • 9.   Add the butter to the Thermomix bowl.
  • 10.   Add the lid with the measuring cup.
  • 11.   Cook 30 min/100°C/speed 1.
  • 12.   Add the lid with the measuring cup.
  • 13.   Mix 30 sec/speed 6.
  • 14.   Serve immediately.
