Laurent Mariotte's Florentines

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
    In a saucepan, heat the sugar, honey, butter, and candied fruits over low heat. Bring to a boil. Remove from heat, add the sliced almonds, and mix well with a wooden spoon.
    Press one tablespoon of this mixture into each muffin mold.
  • 2.   Bake for 15 minutes, until lightly caramelized. Let cool to room temperature.
    Meanwhile, melt the chocolate in a double boiler. Using a brush, coat one side of each florentine with the melted chocolate. Flip them over and let the chocolate side set. The florentines are ready, just put them in a bag!
