Gnocchi with Forest Mushroom Sauce

Instructions

  • 1.   Soak your oyster mushrooms in a bowl of water for 20 minutes to rehydrate them.
  • 2.   Peel and finely chop your garlic clove and finely chop your parsley.
  • 3.   Sauté your garlic clove with a drizzle of olive oil for 1 minute in a pan.
  • 4.   Add the mascarpone, parsley, cream, and mushrooms, reserving the water.
  • 5.   Season with salt and pepper, then cook your gnocchi in the mixture for 5 minutes over medium heat from boiling.
  • 6.   Optional: Add some mushroom water to your pan for more sauce, and sprinkle grated Parmesan cheese when serving.

  • 1 tablespoon of grated parmesan (optional)
  • 50 g of thick sour cream
