Delicious Spinach with Soft-Boiled Eggs, Parmesan, and Pine Nuts!

Instructions

  • 1.   Remove the thick stems from the spinach and rinse them under water. Do not let them soak, as it would make them soggy.
  • 2.   Toast the pine nuts in a dry pan.
  • 3.   Cook the eggs in boiling water for 6 minutes.
  • 4.   Peel the garlic clove and stick it on a fork.
    Melt the butter and oil in a large, wide sauté pan. Add the spinach to the pan and mix with the fork.
    The spinach is ready when the leaves have wilted. Do not overcook.
  • 5.   Divide the spinach onto plates in a nest shape. Place a poached egg in the middle. Season with salt and pepper. Garnish with shavings of Parmesan and toasted pine nuts.
