Fresh Mushroom Risotto

Instructions

  • 1.   In a large saucepan, combine the rice, water, and vegetable broth. Cook over low heat (and covered to prevent too much evaporation). Stir regularly to prevent the rice from sticking and add more water if necessary.
  • 2.   In a skillet, melt the butter (over low heat to prevent it from browning!!!) then add the garlic. Gradually add the mushrooms. Let simmer for 5 minutes, then season with salt and pepper.
  • 3.   Mix the mushroom mixture with the cooked rice, then add the mascarpone.
  • 4.   Adjust the seasoning, plate, and garnish with chives or chervil...
  • 5.   Enjoy your meal!

  • 40 cl of water
  • 80 g of mushroom
  • 15 g of butter
  • 30 g of mascarpone
  • 1 garlic
  • 10 g of vegetable broth
  • 1 tablespoon of parmesan
  • salt (according to taste)
  • pepper (according to taste)
