Almond-flavored Financiers

Instructions

  • 1.   In a bowl, mix together the sugar, almond powder, and flour. Mix well.
  • 2.   Add the egg whites one by one, stirring well. The batter should be smooth. Then add a few drops of almond extract.
  • 3.   Melt the butter in a saucepan over low heat. It should be melted but not colored. Then incorporate it into the previous mixture.
  • 4.   Fill paper liners or molds about 2/3 full. Bake for 5 minutes (preheated oven at 240°C - 475°F) then reduce the oven temperature to 180°C (350°F) and continue baking for another 10 minutes. The financiers should be lightly golden.
  • 5.   As soon as they come out of the oven, sprinkle the financiers with granulated sugar (optionally flavored, for example with cinnamon...).
  • 6.   Let cool and enjoy!
