Instructions

  • 1.   Cut half of the ham into very small pieces. Remove the ends of the zucchini, rinse them, do not peel them but cut them into thin slices. Peel and finely chop the onion, peel and press the garlic.
  • 2.   Heat half of the olive oil in a large skillet, sauté the zucchini over high heat, stirring often. Cook for 3 minutes, then add the onion, garlic, and chopped chives.
  • 3.   Preheat the oven to 425°F (210°C). In a bowl, combine the ricotta, half of the grated emmental cheese, the small pieces of ham, the contents of the skillet, salt, and pepper. Mix everything with a fork.
  • 4.   Spread the mixture on the slices of bread, press lightly, and sprinkle with the remaining cheese. Place the slices on a baking sheet and bake for 15 minutes to gratinate. When serving, place a rosette of ham on each toast.
