Squash Souffle

Instructions

  • 1.   1- Peel the squash and cut it into pieces. Steam it for 10 minutes.
  • 2.   2- In a saucepan, put the milk, butter, and salt and bring to a boil.
  • 3.   3- Add the semolina to the boiling milk and cook for 10 minutes while stirring.
  • 4.   4- Pass the cooked squash through a potato ricer and mix it with the cooked semolina.
  • 5.   5- Add 2 egg yolks and the beaten egg whites.
  • 6.   6- Bake in a hot oven for 30 minutes.
