Banana & Oatmeal Pancakes

Instructions

  • 1.   Put the oatmeal in a blender, blend until the oatmeal is as fine as possible.
  • 2.   Reserve the oatmeal in a bowl, add cinnamon, cornstarch, and baking powder, mix everything together.
  • 3.   Then add the whole eggs.
  • 4.   Add the banana, vanilla extract, and blend everything until you get a homogeneous batter.
  • 5.   Pass your mixture through a sieve to have a smooth batter and avoid any excess oatmeal residue.
  • 6.   Cook your pancakes in a lightly oiled pan over low heat, half a ladle of batter is enough, flip the pancake when bubbles appear on the surface, once flipped, let it cook for 30 seconds to a maximum of 1 minute.
  • 7.   Now all that's left is to enjoy!

  • 2 teaspoon of cornstarch
  • 10 g of baking powder
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 1 egg
  • 100 ml of plant-based milk
