1. Put the oatmeal in a blender, blend until the oatmeal is as fine as possible.
2. Reserve the oatmeal in a bowl, add cinnamon, cornstarch, and baking powder, mix everything together.
3. Then add the whole eggs.
4. Add the banana, vanilla extract, and blend everything until you get a homogeneous batter.
5. Pass your mixture through a sieve to have a smooth batter and avoid any excess oatmeal residue.
6. Cook your pancakes in a lightly oiled pan over low heat, half a ladle of batter is enough, flip the pancake when bubbles appear on the surface, once flipped, let it cook for 30 seconds to a maximum of 1 minute.
