Instructions

  • 1.   In a mixing bowl, cream together the sugar, egg, and salt with a wooden spoon until the mixture becomes frothy.
  • 2.   Add the flour all at once and quickly mix it in with a spatula. Then, crumble the dough with your fingers into small crumbs (this is called "sanding").
  • 3.   Pour the dough onto a work surface and place the butter in one piece in the center. Incorporate the butter by kneading the dough by hand; form a ball on the surface.
  • 4.   Roll out the dough with a rolling pin; use it to line tart molds, tartlets...
