Green Vegetable Waffles

Instructions

  • 1.   Wash the vegetables, remove the seeds from the zucchini. Cut into coarse pieces.
  • 2.   Blend the zucchini and broccoli in a blender or food processor, pulsing several times. The mixture should have a rice grain-like texture, not a puree/soup. Transfer to a bowl and set aside.
  • 3.   Put all the other ingredients in the blender or food processor (including the spinach sprouts) except for the grated Emmental cheese, and blend until you obtain a smooth batter.
  • 4.   Transfer the batter to the bowl with the vegetables, add the grated cheese, and mix everything together with a spoon.
  • 5.   Cook 1 tablespoon of batter in a well-heated waffle iron greased with coconut oil.

  • 30 g of plant-based milk
  • 100 g of broccoli

  • 50 g of grated emmental (optional)
  • 1 teaspoon of baking powder
  • 100 g of red kuri squash (optional)
  • 100 g of sweet potato
  • salt (according to taste)
