Mini-zucchini, tomato, and mozzarella pizzas

Instructions

  • 1.   Preheat the oven to 220°C (425°F).
  • 2.   Wash the zucchini and peel it. Wash, peel, core, and slice the tomatoes.
  • 3.   In a skillet over medium heat, brown the zucchini slices with olive oil until tender, then season with salt and pepper.
  • 4.   Cut rounds out of the pizza dough and place them on a baking sheet lined with parchment paper.
  • 5.   Top each dough round with a slice of zucchini and a slice of tomato. Season with salt and pepper, and cover with a slice of mozzarella.
  • 6.   Bake for 10 minutes.
