Maakouda (Moroccan potato galette)

Moroccan potato galette. This recipe is taken from the book "Moroccan cuisine" by Rachida Amhaouche. It can be served as a side dish or as an appetizer.

Instructions

  • 1.   Wash and poach the potatoes, previously cut into cubes, in salted water. Then mash them (using a mill or by mashing with a fork).
  • 2.   Place the obtained mashed potatoes in a bowl, add an egg, chopped parsley and coriander, crushed garlic, cumin, and turmeric.
    Season with salt and pepper, and mix everything together.
  • 3.   Shape small galettes (slightly flattened balls), dip each one in a bowl containing beaten egg, then coat them with flour on both sides.
  • 4.   In hot frying oil, immerse the maakouda and fry them until golden brown on both sides.

  • 2 eggs
  • 1 tablespoon of fresh coriander
  • 3 garlic cloves
  • 1 tablespoon of ground cumin
  • ¼ teaspoon of turmeric powder
  • 1 glass of flour
  • 1 glass of frying oil
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
