Maakouda (Moroccan potato pancake)

Instructions

  • 1.   Wash and poach the potatoes previously cut into cubes in salted water then mash them (with a grinder or mash with a fork).
  • 2.   Place the mash obtained in a bowl, add an egg, chopped parsley and coriander, crushed garlic, cumin and turmeric. Season with salt and pepper and mix everything together.
  • 3.   make small pancakes (lightly crushed meatballs), dip them one by one in a bowl containing a beaten egg then flour them on both sides.
  • 4.   in the hot frying, plunge the maakouda and brown them on both sides.
