Easy and Gluten-Free Pancakes

The kings of brunches and breakfasts, pancakes are a staple on our tables for all occasions. And if you are gluten intolerant, you can still enjoy these delicious gluten-free pancakes. They only require a few ingredients and can be prepared in no time. Whether plain, with a drizzle of maple syrup or a bit of jam, you can enjoy them in a thousand and one ways.

  • 1.   Pour the rice flour, baking powder, granulated sugar, and salt into a large mixing bowl. Mix well and make a well in the center.
  • 2.   Pour in the eggs and gradually add the milk while whisking to avoid lumps. You should obtain a smooth and homogeneous batter. Let the pancake batter rest for 1 hour.
  • 3.   Melt a small knob of butter in a non-stick skillet. Pour a small ladleful of batter into the skillet. Cook until bubbles appear on the surface of the pancake. Flip the pancake and continue cooking for a few minutes. Repeat the process until all the batter is used. Enjoy the pancakes warm or cold.
