Gluten-free and butter-free Chocolate Moist Cake

After the great success of the sugar-free and butter-free chocolate cake, here is a super moist chocolate cake without butter (and this time it's not zucchini replacing the butter...) and gluten-free too! Easy to make, you will be pleasantly surprised by its light and indulgent texture.

Instructions

  • 1.   Melt the chocolate in the microwave, smooth it with a whisk and set aside 2 tablespoons of melted chocolate.
  • 2.   Whisk the eggs with the sugar in a large bowl until the mixture becomes frothy.
  • 3.   Add the zest of an orange, mix, and add the milk (or soy milk or almond milk for a lactose-free version).
  • 4.   Then add the applesauce (which replaces the butter in a traditional cake), mix.
  • 5.   Add the melted chocolate, mix, and then add the dry ingredients: baking powder, almond powder, baking soda, cornstarch, mix but not too much :)
  • 6.   Pour everything into a non-stick mold (mine measures 18 cm in diameter).
  • 7.   Bake at 180°C for 50 minutes.
  • 8.   When it comes out of the oven, insert a knife blade in the center, if it comes out dry it's done, otherwise cover with aluminum foil and put it back in the oven for 5 to 10 minutes.
  • 9.   While the cake is still hot, pour the juice of an orange over it to soak it.
  • 10.   Drizzle with the 2 tablespoons of melted chocolate and enjoy.

  • 200 g of dark baking chocolate
  • 100 g of Cornstarch
  • 100 g of almond powder
  • 80 g of sugar
  • 2 eggs
  • 150 ml of milk
  • 1 bag of baking powder
  • 1 teaspoon of baking soda
  • 100 g of unsweetened applesauce
  • 2 oranges
