Gluten-free and butter-free chocolate cake

After the big success of the cake without sugar and without chocolate butter, here is a super soft chocolate cake without butter (and this time it is not zucchini that replaces butter…) and gluten free by the way! Easy to make, you will be pleasantly surprised by its light and delicious texture.

Instructions

  • 1.   Melt the chocolate in the microwave, smooth with a whisk and set aside 2 tsp. melted chocolate
  • 2.   Whisk the eggs with the sugar in a large bowl until the mixture is frothy
  • 3.   Add the zest of an orange, mix, and add the milk (or soy or almond milk for a lactose-free version)
  • 4.   Then add the applesauce (which replaces butter in a traditional cake here), mix
  • 5.   Add the melted chocolate, mix, and then add the dry ingredients: yeast, almond powder, bicarbonate, cornstarch, mix but not too much :)
  • 6.   Place everything in a non-stick pan (mine is 18 cm in diameter)
  • 7.   Bake at 180 ° C for 50 min
  • 8.   Remove from the oven, plant the blade of a knife in the center, if it comes out dry it is good, otherwise cover with aluminum foil and return to the oven 5 to 10 minutes
  • 9.   While the cake is hot, pour the juice of an orange over it, to soak it
  • 10.   Top with the 2 tbsp. melted chocolate, and enjoy.
