Lentil Salad with Auvergne Blue Cheese

Instructions

  • 1.   Cook the lentils
  • 2.   Preheat the oven to 210°C (410°F). In a pan, lightly toast the pine nuts and set aside.
  • 3.   In an ovenproof dish, spread the figs (frozen) with 1 tablespoon of olive oil, season with salt and pepper, and bake for 10 to 12 minutes. Let cool, then cut the Auvergne blue cheese into cubes and set aside.
  • 4.   In a large salad bowl, add the lentils, onions, garlic, and herbs. Drizzle with 3 tablespoons of olive oil and vinegar, add the Auvergne blue cheese, figs, and pine nuts, and mix well. Adjust the seasoning if necessary and refrigerate before serving.

  • 240 g of dry green lentil
  • 200 g of fig
  • 1 tablespoon of onion
  • 2 tablespoon of herb mix for picard salad
  • 1 tablespoon of parsley
  • 1 tablespoon of chives
  • 1 garlic clove
  • 2 tablespoon of white wine vinegar
  • 150 g of blue d'Auvergne
  • 70 g of pine nut
  • 4 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
