1. In a saucepan, heat together:
- vanilla
- salt (2 pinches)
- sugar
- milk
The goal is for the vanilla to release its flavor, so it needs to be heated well.
2. Mix together:
- flour
- oil
- eggs
The batter should be smooth. If necessary, add another egg.
3. Incorporate the butter into the milk. The butter will melt and slightly lower the temperature of the mixture. It should be just warm, not hot enough to cook the eggs.
4. Gradually add the flavored milk.
5. Add the alcohol:
- pastis
- rum
- beer
The beer is used to dilute the mixture. The batter should be very liquid (more than you think...).
6. Cook the pancakes.
Tips:
- It's better to use a small pan.
- Do not butter the pan.
- The pan should be very hot.
- Flip the pancake as soon as the edges start to come off.
- Flip them by hand as they are very fragile.
