Broccoli and Cantal Flans

Instructions

  • 1.   Cut the broccoli florets into small pieces.
    Steam them for about 20 minutes, until they are tender.
  • 2.   Make cantaloupe shavings with a vegetable peeler.
    Mix the cream, eggs, broccoli, and cantaloupe. Season with salt and pepper.
  • 3.   Grease 4 ramekins.
    Fill them with the mixture and place them in a steamer basket.
    Steam them for about 25 minutes, until the mixture is set.
  • 4.   Run a knife blade along the edge of the ramekins, then unmold the flans onto small slate boards.

  • 3 eggs
  • 2 tablespoon of butter
  • salt (according to taste)
