Instructions
1. Cut the cauliflower into small bouquets, place them under cold water and cook them for 5 minutes in a saucepan of boiling water.
2. Drain the cauliflower and place it in a gratin dish.
3. Prepare the bechamel sauce by melting the butter in a saucepan. Then pour the flour and mix with a whisk.
4. Gradually add the milk without stopping to mix to avoid lumps. Add half of the grated cheese and a pinch of nutmeg, salt and pepper. Mix until the sauce coats your spoon.
5. Coat the bouquets of cauliflower with bechamel sauce. Sprinkle with the remaining grated Gruyere cheese and bake for 30 minutes at 6 (180 °).
