Instructions
1. Cut the cauliflower into small florets, rinse them under cold water, and cook them for 5 minutes in a pot of boiling water.
2. Drain the cauliflower and place it in a gratin dish.
3. Prepare the béchamel sauce by melting the butter in a saucepan. Then add the flour and whisk together.
4. Gradually add the milk while continuously stirring to avoid lumps. Add half of the grated cheese, a pinch of nutmeg, salt, and pepper. Stir until the sauce coats the back of a spoon.
5. Pour the béchamel sauce over the cauliflower florets. Sprinkle the remaining grated gruyère cheese on top and bake for 30 minutes at 350°F (180°C).
