Instructions

  • 1.   Cut the cauliflower into small bouquets, place them under cold water and cook them for 5 minutes in a saucepan of boiling water.
  • 2.   Drain the cauliflower and place it in a gratin dish.
  • 3.   Prepare the bechamel sauce by melting the butter in a saucepan. Then pour the flour and mix with a whisk.
  • 4.   Gradually add the milk without stopping to mix to avoid lumps. Add half of the grated cheese and a pinch of nutmeg, salt and pepper. Mix until the sauce coats your spoon.
  • 5.   Coat the bouquets of cauliflower with bechamel sauce. Sprinkle with the remaining grated Gruyere cheese and bake for 30 minutes at 6 (180 °).
