Blue Cheese Baked Eggs

Instructions

  • 1.   Preheat the oven to 150°C (300°F).
    Using a fork, mash the blue cheese and sauté it in butter.
    Once the mixture is smooth, add 3 generous tablespoons of heavy cream and mix for 4 minutes.
  • 2.   Grease 4 ramekins.
    Pour the blue cheese mixture into each ramekin.
    Crack an egg on top.
  • 3.   Place the ramekins on a baking sheet, pour 2 glasses of water onto the sheet.
    Bake at 150°C (300°F) until the egg white and yolk are set.
  • 4.   Remove from the oven, add 1 teaspoon of heavy cream to each ramekin and sprinkle with a crumble of blue cheese for decoration.

Notes & Suggestions

  • You can replace the blue cheese with Roquefort.
