Thermomix Liège Chocolate

Liège chocolate is a variation of Liège coffee in which coffee is replaced with chocolate. For this preparation, I am using a recipe that does not include chocolate ice cream but instead consists of a dessert cream topped with real whipped cream, unlike those found in stores. Instructions

  • 1.   Place 500 grams of semi-skimmed milk, 80 grams of powdered sugar, 25 grams of cornstarch, 3 egg yolks, and 20 grams of unsweetened cocoa in the Thermomix. Cook for 8 min/90°C/speed 3.
  • 2.   Add 50 grams of thick cream to the Thermomix and mix for 30 sec/speed 4.
  • 3.   Pour the chocolate into large glasses.
  • 4.   Refrigerate for 60 minutes.
  • 5.   For the whipped cream, attach the whisk to the Thermomix.
  • 6.   Add 400 grams of liquid cream to the bowl and refrigerate.
  • 7.   Refrigerate for 2 hours.
  • 8.   Mix for 1 min 30 sec/speed 3 with the Varoma instead of the measuring cup on the lid to prevent splattering.
  • 9.   Add 40 grams of powdered sugar to the Thermomix and mix for 1 min/speed 4, then remove the whisk.
  • 10.   Refrigerate.
  • 11.   Cover the chocolate with whipped cream using a piping bag or a pressure piston and decorate with chocolate shavings or a sprinkle of cocoa.

  • 20 g of 100% cocoa
  • 50 g of sour cream
  • Pour la chantilly :
  • 400 g of liquid fresh cream
  • 40 g of powdered sugar
