Instructions

  • 1.   Heat the water with the cinnamon, nutmeg, vanilla, and lime. Just let it simmer without bringing it to a boil...
  • 2.   Add the sweetened condensed milk and mix. Beat the eggs in a bowl. Add a ladle of the water/sweetened condensed milk mixture to the eggs while whisking.
  • 3.   Pour the mixture back into the pot while continuing to mix.
  • 4.   Thicken over very low heat while constantly stirring. The chaudeau should coat the spoon. Add the almond extract.
  • 5.   Remove the pot from the heat and continue stirring for 5 minutes. Remove the spices and serve warm.

  • 4 medium egg
  • 1 cinnamon stick
  • 1 pinch of nutmeg
  • 1 vanilla bean
  • 1 small lime zest
  • 1 bitter almond
