Comtesses (Kontès)

Comtesses are small typical shortbread cookies from Guyana. They are traditionally served as an accompaniment to other desserts.

Instructions

  • 1.   In a bowl, combine the flour, salt, and softened butter cut into pieces. Knead until the dough is well blended.
  • 2.   On a floured surface, roll out the dough to a thickness of 1cm. Use a cookie cutter or a glass to cut out rounds.
  • 3.   Place the rounds on a baking sheet lined with parchment paper and sprinkle with sugar.
  • 4.   Bake for 30 minutes at 150°C (300°F). It is important to closely monitor the baking as the cookies should not brown.
  • 5.   Allow to cool on a wire rack after baking.
