Green Chakchouka

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
  • 2.   Wash and roughly chop the spinach, bell pepper, and parsley. Cut the onion and mince the garlic.
  • 3.   In a skillet, heat a drizzle of olive oil and sauté the onion with the garlic.
    Add the cumin and turmeric, then mix.
    Let it cook for a few minutes, then add the spinach and parsley.
    Let the spinach wilt while gently stirring.
    Season with salt and pepper.
  • 4.   After 3-4 minutes, transfer the mixture to 2 small gratin dishes,
    smooth the surface with the back of a spoon, then make 4 holes.
    Crack an egg into each hole.
  • 5.   Bake for 12-15 minutes (runny yolks, cooked whites).
  • 6.   Sprinkle with a pinch of chili powder and green onion.
  • 7.   Serve with grilled pita bread or toasted baguette slices.

Notes & Suggestions

  • It is possible to make a separate "sauce":
    - Whisk the sheep yogurt with a fork.
    - Slice the green onion thinly, season with salt, bell pepper, and lemon juice.

  • 300 g of fresh spinach
  • 1 green bell pepper
  • 1 onion
  • 4 eggs
  • ½ teaspoon of ground cumin
  • ½ teaspoon of turmeric powder
  • 2 pita breads
  • 1 sheep yogurt (optional)
  • 1 small green onion (optional)
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
