1. Preheat the oven to 200°C (400°F).
2. Wash and roughly chop the spinach, bell pepper, and parsley. Cut the onion and mince the garlic.
3. In a skillet, heat a drizzle of olive oil and sauté the onion with the garlic.
Add the cumin and turmeric, then mix.
Let it cook for a few minutes, then add the spinach and parsley.
Let the spinach wilt while gently stirring.
Season with salt and pepper.
4. After 3-4 minutes, transfer the mixture to 2 small gratin dishes,
smooth the surface with the back of a spoon, then make 4 holes.
Crack an egg into each hole.
5. Bake for 12-15 minutes (runny yolks, cooked whites).
6. Sprinkle with a pinch of chili powder and green onion.
7. Serve with grilled pita bread or toasted baguette slices.
