Baked Potatoes with Herb Sauce

Instructions

  • 1.   Preheat your oven to 200°C (400°F).
    Thoroughly scrub the potatoes, cut them into large quarters, and place them on a greased baking sheet.
    Bake for about 20 minutes in the oven at 200°C (180°C in convection mode).
    Season with salt and pepper, and drizzle with a little oil.
  • 2.   Wash the herbs, pat them dry, and finely chop them.
    Peel the hard-boiled eggs and finely chop them.
    Chop the pickles.
    For the sauce, mix sour cream with yogurt, eggs, pickles, mustard, lemon juice, salt, and pepper.
    Serve the potatoes with this green sauce.

  • 750 g of new potato
  • 1 teaspoon of salt with herbs
  • 2 tablespoon of olive oil
  • 1 bunch of fine herbs
  • 2 hard-boiled eggs
  • 2 pickles (optional)
  • 300 g of sour cream
  • 150 g of yogurt
  • 1 teaspoon of mustard
  • 1 tablespoon of lemon juice
  • 1 tablespoon of butter
  • salt (according to taste)
  • pepper (according to taste)
