1. *-Prepare the dough:
2. Mix the flour, salt, melted butter, and enough water to form a smooth dough ball.
3. Cover with a damp cloth and let it rest at room temperature for 3 hours.
4. Mix the cottage cheese and sugar in a bowl.
5. Add the egg yolks, flour, and cinnamon.
6. Beat everything together until you have a smooth cream.
7. Roll out the dough on a floured surface.
8. Cut it into 6 discs using a cookie cutter.
9. Preheat the oven to 200°C (400°F).
10. Place the dough discs in individual tart molds.
11. Fill the tart shells with the cream.
12. Bake for 15 minutes.
13. Allow to cool after removing from the oven.
14. Serve chilled.
