Yogurt Cake for Breakfast

A revamped yogurt cake for a complete breakfast.

Instructions

  • 1.   Pour the yogurt into a bowl, add the flours, sugar, baking powder, oil or applesauce, flax seeds, mix well, add the eggs and mix again until you obtain a smooth batter. Add flavors or dried fruits if desired and mix.
  • 2.   Pour into a loaf pan and bake for 45 minutes at 180°C. Check the doneness with the tip of a knife. Let cool on a wire rack.

Notes & Suggestions

  • Buckwheat flour or your choice of: rye, spelt, oat, whole wheat, quinoa.
  • Coconut oil or your choice of: hazelnut oil, applesauce.
  • Lemon zest or your choice of: cinnamon, vanilla, hazelnuts, almonds, dried fruits, seeds.

  • 1 cup of brown sugar
  • 2 cup of whole wheat flour
  • 1 cup of buckwheat flour
  • 1 bag of baking powder
  • 1 cup of coconut oil
  • 2 large egg
  • 1 tablespoon of flaxseed
  • 1 lemon zest (optional)
