Scallops in Leek Papillotes

Christmas is just around the corner, and we propose this easy recipe for "scallops in leek papillotes" that will delight your family for a dream Christmas meal.

Instructions

  • 1.   Slice the leeks lengthwise and wash them. Dry them thoroughly with a towel.
  • 2.   Put the leeks in a sauté pan. Drizzle them with olive oil and place over low heat, covered. Cook for 10 minutes, stirring regularly. Season with salt and pepper, and set aside.
  • 3.   Squeeze the juice from the lemons. Mix the two juices in a bowl.
  • 4.   Cut six large squares of parchment paper. Divide the leeks in the center of each square and place three scallops on top. Season with salt and sprinkle with pink berries and chervil. Drizzle with a little lemon juice.
  • 5.   Fold the parchment paper to form papillotes. Place the papillotes in the basket of a steamer. Place the basket on a suitable pot filled three-quarters with hot water. Cover and cook for 20 minutes.
  • 6.   Serve immediately after cooking with white rice.
