1. Toast the bread slices.
2. Cook the diced tomatoes in a pan with olive oil, herbs, onions, or whatever you like...
3. Mix the cheese with the sour cream and season to taste. Once the tomatoes are cooked, place them on 2 toasted bread slices, add a dollop of the cheese-sour cream mixture in the middle, and cover with the other bread slice.
4. Add the remaining cheese-sour cream mixture generously covering the entire bread.
5. Place the vegetarian croques in the oven (preheated to 200°C) in a dish or on parchment paper or aluminum foil (be careful, the cheese will melt a bit!) and bake until golden brown (you can broil them a bit at the end if it takes too long).
6. Meanwhile, if desired, fry some eggs and place them on top of the croques once they are out of the oven.
