Vegetarian Croque Monsieur (or Croque Mademoiselle!)

Vegetarian Croque

Instructions

  • 1.   Toast the bread slices.
  • 2.   Cook the diced tomatoes in a pan with olive oil, herbs, onions, or whatever you like...
  • 3.   Mix the cheese with the sour cream and season to taste. Once the tomatoes are cooked, place them on 2 toasted bread slices, add a dollop of the cheese-sour cream mixture in the middle, and cover with the other bread slice.
  • 4.   Add the remaining cheese-sour cream mixture generously covering the entire bread.
  • 5.   Place the vegetarian croques in the oven (preheated to 200°C) in a dish or on parchment paper or aluminum foil (be careful, the cheese will melt a bit!) and bake until golden brown (you can broil them a bit at the end if it takes too long).
  • 6.   Meanwhile, if desired, fry some eggs and place them on top of the croques once they are out of the oven.
  • 7.   Enjoy your meal!

  • 1 small soy cream
  • 70 g of grated cheese
  • 4 slice of sliced bread
  • 2 tomatoes
  • 2 eggs
