Invisible Zucchini and Fresh Goat Cheese Cake -LIGHT-

Instructions

  • 1.   Preheat the oven to 350°F. Wash the zucchini and roughly chop them. Using a food processor or a mandoline, grate the zucchini. Peel the shallot and slice it.
  • 2.   In a bowl, whisk together the 2 eggs and the egg white, then incorporate the goat cheese and shallot. Season with salt and pepper. In a separate bowl, dissolve the cornstarch in half of the milk and pour the egg mixture into it. Pour the remaining milk into the bowl and mix everything together.
  • 3.   Grease a loaf pan with a little olive oil. Place the grated zucchini in the pan and pour the mixture over it. Using a spatula or your hands, press the mixture down firmly. Bake for 45 minutes at 350°F. Let it cool for 5 minutes before unmolding.
