Mushroom and Mustard Soy Protein Stew

Instructions

  • 1.   Cook the soy protein in half a liter of water with a vegetable bouillon cube.
  • 2.   Sauté the onion and carrot slices in oil, then add the mushrooms.
  • 3.   Prepare the starch in water until obtaining a homogeneous mixture.
  • 4.   Add the soy protein to the pot and cover with the starch mixture.
    Add the wine, thyme, and bay leaf. Cook for another 45 minutes on low heat, covered.
  • 5.   Can be served with cauliflower or salsify.

  • 175 g of dehydrated soy protein
  • 500 g of button mushroom
  • 3 tablespoon of mustard
  • 1 carrot
  • 20 cl of dry white wine
  • 20 cl of sour cream
  • 1 bay leaf
  • 2 stalk of thyme
  • 1 tablespoon of cornstarch
  • 20 cl of water
  • 1 vegetable bouillon cube
