Ricotta, Spinach, and Tomato Quiche

Instructions

  • 1.   Preheat the oven to 180 °C (350 °F).
  • 2.   Sauté the spinach, season with salt, pepper, and nutmeg. Let drain in a colander.
  • 3.   Cut the tomatoes in half.
  • 4.   Mix the eggs, cream, and ricotta. Season with salt, pepper, and nutmeg.
  • 5.   Line a pie dish with the puff pastry. Arrange the spinach and cherry tomatoes on top, then pour in the cream and eggs mixture. Bake at 180 °C (350 °F) for 40 to 50 minutes.
