WW Banana Pancake Muffins

Instructions

  • 1.   Preheat the oven to 180°C (gas mark 2, convection oven: 160°C). Peel the bananas. Mash 3 bananas, eggs, baking powder, and skyr together. Mix in the sugar and cinnamon. Cut the remaining banana into small pieces.
  • 2.   Divide the batter into 12 silicone muffin molds. Top each one with the banana pieces. Bake the muffins in the middle of the oven for about 20 minutes and serve.
