Chocolate Mousse

Instructions

  • 1.   Separate the egg whites from the yolks (keep 3 yolks for the mousse and reserve the other 2 yolks for another recipe).
    Whisk the egg whites with a pinch of salt. Just before finishing, add the sugar.
  • 2.   Melt the chocolate in a double boiler.
  • 3.   Mix the melted chocolate with the 3 yolks. Let it cool.
  • 4.   Gently fold in the egg chocolate mixture with the egg whites.
  • 5.   Pour into ramekins and refrigerate for 6 hours.

  • 1 pinch of salt
