Cardoon Gratin

A delicious gratin made with an ancient vegetable: the cardoon. With its slight artichoke flavor and a good béchamel sauce, we're going to enjoy this dish.

Instructions

  • 1.   Cook the cardoons in boiling water for 20 minutes. Drain them and cut them into pieces.
  • 2.   Preheat the oven to 210°C (410°F) (thermostat 7).
  • 3.   Grease a baking dish and place the cardoons in it.
  • 4.   Prepare the béchamel sauce: brown the flour in 30 g (2 tablespoons) of melted butter over medium heat. Add the milk, let it thicken while stirring, then season with salt, pepper, and grated nutmeg.
  • 5.   Off the heat, stir in the egg yolks and the gruyère cheese.
  • 6.   Pour the sauce over the cardoons and bake for about 20 minutes, until the top is golden brown.

  • 1 pinch of nutmeg
  • 100 g of grated cheese
  • salt (according to taste)
