Normandy Douillon

A little-known Normandy specialty made with shortcrust pastry, apple, honey, cinnamon, and hazelnut.

Instructions

  • 1.   Preparation of the cooking syrup; simmer water with:
    - 20g sugar per apple
    - 1 teaspoon of cinnamon for every 2 apples
    - vanilla
  • 2.   Preparation of the apples:
    - peel
    - core
  • 3.   cook the apples for 15 minutes in the syrup, then let them cool for 15-20 minutes
  • 4.   The filling; knead the butter until it becomes a paste and add:
    - finely crushed hazelnuts (to keep some crunch)
    - honey
    - cinnamon
    - if possible, hazelnut (or almond) powder
  • 5.   Assembly:
    - fill the apples with the filling
    - cover the apples with a mixture of sugar and cinnamon
    - roll out the shortcrust pastry and make circles
    - place the apples on top
    - wrap the apples in the pastry
    - seal the edges with egg if necessary
    - brush the pastry with egg yolk
  • 6.   bake for 35 minutes (to cook the pastry)

  • 4 apples
  • 1 shortcrust pastry with pure butter
  • 2 egg yolks
  • Sirop de cuisson :
  • 80 g of sugar
  • 1 tablespoon of cinnamon powder
  • 1 teaspoon of vanilla extract
  • Appareil :
  • 10 hazelnuts
  • 4 tablespoon of butter
  • 2 teaspoon of honey
  • 1 teaspoon of cinnamon powder
  • 2 tablespoon of hazelnut powder (optional)
