1. Preparation of the cooking syrup; simmer water with:
- 20g sugar per apple
- 1 teaspoon of cinnamon for every 2 apples
- vanilla
2. Preparation of the apples:
- peel
- core
3. cook the apples for 15 minutes in the syrup, then let them cool for 15-20 minutes
4. The filling; knead the butter until it becomes a paste and add:
- finely crushed hazelnuts (to keep some crunch)
- honey
- cinnamon
- if possible, hazelnut (or almond) powder
5. Assembly:
- fill the apples with the filling
- cover the apples with a mixture of sugar and cinnamon
- roll out the shortcrust pastry and make circles
- place the apples on top
- wrap the apples in the pastry
- seal the edges with egg if necessary
- brush the pastry with egg yolk
6. bake for 35 minutes (to cook the pastry)
