Frozen chocolate and caramelized almond nougat

To make a marbled nougat, mix only half of the melted chocolate into the base mixture and drizzle the remaining melted chocolate while gently stirring with a fork to create a marbled effect.

Instructions

  • 1.   Break the chocolate into pieces and melt it with 6 tablespoons of water in a double boiler or in the microwave.
  • 2.   Caramelize the almonds with the sugar in a non-stick pan, stirring to prevent them from clumping together. Let them cool.
  • 3.   Whip the chilled cream until it forms stiff peaks. Add the milk and tablespoon of sugar.
  • 4.   Beat the egg whites until stiff peaks form with a pinch of salt, then gradually pour in the hot liquid honey while continuing to beat.
  • 5.   Vigorously mix the egg yolks with the melted chocolate. Add the almonds, then gently fold in the whipped cream and beaten egg whites.
  • 6.   Line the bottom and sides of a round or loaf cake pan with parchment paper. Pour in the mixture and freeze for at least 12 hours.
  • 7.   Remove the frozen nougat from the freezer, unmold it, and let it sit for 15 minutes before serving.
