Stuffed Zucchini with Tuna

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Prepare the zucchini by cutting off the top and scooping out the flesh. Season the inside with salt.
  • 3.   In a bowl, mix together the drained tuna, tomato sauce, minced onion and garlic, chopped parsley, and a little salt and pepper.
  • 4.   Heat a dry skillet. Pour the mixture into the skillet and let it simmer for 10 minutes.
  • 5.   Once the mixture in the skillet is ready, pour it into the zucchini.
  • 6.   Place the zucchini in an oven-safe dish, along with the tops and a small amount of water.
  • 7.   Bake for one hour.
  • 8.   Allow the stuffed zucchini to cool slightly on a rack before serving.
