Simple Lemon Chicken

Instructions

  • 1.   Wash, dry, and remove the coriander leaves, then prepare the essential marinade for the lemon chicken recipe. Squeeze the juice of two limes, pour it into a dish, and add 1 tablespoon of oil and the coriander, then mix.
  • 2.   Cut the chicken breasts into pieces, taking care to keep the skin intact, put them in the dish, and pour the lime marinade over them. Cover the dish and refrigerate for 30 minutes. Meanwhile, peel and slice the onions.
  • 3.   Now let's move on to cooking your lemon chicken. Preheat the oven to 425°F (210°C). Heat 1 tablespoon of oil in a non-stick skillet and sauté the onions over low heat, stirring regularly. When the onions are cooked, remove them from the heat and spread them in the bottom of an oven-safe dish. Then place the chicken pieces on top, pour the marinade over them, and season with salt and pepper.
  • 4.   Bake the chicken in the oven for 30 minutes to 1 hour (depending on the quantity of lemon chicken). Serve garnished with a few remaining lime wedges and accompanied by vegetables such as zucchini or some potatoes.

Notes & Suggestions

  • Baking in the oven limits the use of fats. The lemon marinade adds flavor and makes the meat more tender without adding many calories. Keeping the chicken skin during cooking prevents the poultry from drying out. Chicken, once the skin is removed, is a lean meat rich in proteins, which help renew our cells and promote healing. That's why it is necessary to consume meat or an equivalent (fish, eggs...) 1 to 2 times a day.

    Feel free to replace the lemon juice with orange juice for more originality. You can accompany this chicken with basmati rice.
