Kurtoskalacs

Kurtoskalacs is a sweet preparation originating from Hungary. This essential dessert is shaped like a long cylinder and is cooked over a wood fire. It therefore has an incomparable flavor and a texture that is both crispy and soft. An original recipe to discover without delay.

Instructions

  • 1.   Warm the milk. Dissolve the yeast in the milk. Let it rest for 10 minutes.
  • 2.   Pour the flour, sugar, and salt into a large bowl. Add the egg yolks, whole eggs, and milk. Knead vigorously until you obtain a homogeneous dough.
  • 3.   Melt the butter in the microwave or in a saucepan. Incorporate it into the dough. Cover the bowl and let the dough rest for 1 hour at room temperature.
  • 4.   On a floured work surface, roll out the dough to a thickness of 2 cm. Cut strips about 3 cm wide. Cover your wooden cones with aluminum foil and lightly oil them. Wrap a strip of dough around the cylinder.
  • 5.   Using a brush, brush the dough with water. Roll the cylinder in powdered sugar. Cook the Kurtoskalacs in a fireplace, turning them regularly. Gently remove the Kurtoskalacs from the cylinder. Let them cool before tasting.

  • 500 g of flour
  • 30 g of fresh baker's yeast
  • 2 tablespoon of powdered sugar
  • 30 cl of milk
  • 2 eggs
  • 2 egg yolks
  • 80 g of butter
  • 1 pinch of salt
  • Pour la finition :
  • 2 tablespoon of water
  • 8 tablespoon of powdered sugar
