Instructions

  • 1.   Break the eggs into a bowl and whisk them with the chives. Season with salt and pepper.
  • 2.   Heat the olive oil in a large skillet and pour in the mixture. Cook over high heat, then reduce the heat, add the grated cheese and cook for a few more minutes.
  • 3.   Fold the omelette using a spatula and brown it on both sides. Serve hot.
