Instructions

  • 1.   Break the eggs in a salad bowl and whisk them with the chives. Salt, pepper.
  • 2.   Heat the olive oil in a large skillet and pour in the mixture. Cook over very high heat, then lower the heat, add the grated cheese and cook for a few more minutes.
  • 3.   Then fold the omelette with a spatula and brown on both sides. Serve hot.
