1. Pour olive oil into a sauté pan. Heat it up and add the strips of peppers and chili. Let it simmer for 7 to 8 minutes, stirring regularly.
2. Add the pieces of tomatoes, salt, and pepper. Cook over high heat for 10 minutes, then 20 to 30 minutes over medium heat (depending on the size of your vegetables, whether they are larger or smaller).
3. Crack 4 eggs into the pan, cover, and let them cook for about 7 to 8 minutes, until the egg whites are set.
