Healthy Cake (G’suntheitkueche)

To make this cake, you only need basic ingredients that everyone (or almost everyone) has at home: eggs, flour, sugar, baking powder, butter, milk... You can then flavor it with lemon or vanilla, etc. The key to a moist cake is to beat the sugar and eggs well to obtain a foamy and airy mixture that will double in volume.

Instructions

  • 1.   Preheat the oven to 180°C (350°F). Melt the butter.
    In a bowl, whisk the eggs and sugar for a long time: the mixture should become foamy and double in volume.
  • 2.   Mix the flour and baking powder and incorporate it into the mixture. Then add the applesauce, cooled melted butter, milk, and lemon juice. Mix until you obtain a homogeneous mixture. (you can add pieces of fruit here)
  • 3.   Grease and flour a loaf pan, pour the mixture into it, and bake for 40 to 45 minutes. Check the doneness with the tip of a knife inserted in the center of the cake. Does it come out clean? It's ready!

Notes & Suggestions

  • I made this recipe in a loaf pan, but you can also make it in a round cake pan. Just make sure to adjust the quantities if needed...
