1. Cut thin sticks of gouda cheese. Peel the onion and cut it into thin slices.
2. Place a small tortilla in a non-stick pan, without any fat.
Arrange cheese sticks and a few onion slices (bell peppers, mushrooms...) on top of the tortilla.
3. Fold the tortilla in half and cook it on each side for about 1 minute. The cheese should be melted! Repeat the process for each tortilla.
Notes & Suggestions
If you don't have small tortillas, use halves instead.
