Bohemian Cake

Instructions

  • 1.   1. Preheat the oven to 180°C (350°F). Peel the carrot, remove the stems and seeds from the bell pepper, wash the zucchini, then cut these three vegetables into cubes. Cook them for 15 minutes in a non-stick pan with 1 tsp of olive oil.
  • 2.   2. Mix the flour with the baking powder. Whisk the eggs in a bowl with salt and pepper. Flavor with nutmeg and 1 tsp of grated lemon zest. Stir in the yogurt and 4 tsp of oil. Add the flour, grated cheese, and cooked vegetables. Pour into a non-stick loaf pan. Bake for 45 minutes. Serve hot or cold.

  • 1 bag of baking powder
  • 3 eggs
  • 1 teaspoon of nutmeg

  • 1 pinch of salt
  • 1 pinch of pepper
