Instructions

  • 1.   Dice the onion into small cubes and sauté it for 3 minutes with oil and a pinch of salt in a large skillet.
  • 2.   Cut the broccoli into small pieces and add it to the skillet with the onions, cover and let it cook for 10 minutes.
  • 3.   Add a quarter glass of water if needed halfway through cooking. Whisk the eggs, parmesan, a pinch of salt and pepper, and pour everything into the skillet.
  • 4.   Shake it a bit to evenly distribute the mixture, cover it with a lid and let it cook for 3 minutes.
  • 5.   Let the omelette rest for an additional 3 minutes off the heat, without lifting the lid.
